The Short List
Here is everything that goes into Breadberry Sandwich Bread.

Most bread sold in India has 15–17 ingredients. Ours has 6. The difference is what we chose to leave out — no preservative 282, no emulsifiers 471 or 481, no palm oil, no acidity regulators, no flour treatment agents.
If you can't find it in an Indian kitchen, it doesn't go into Breadberry.
How we bake
Fermentation starts the evening before.
The dough that becomes your morning bread is mixed at 5:30pm the day before. Overnight fermentation — not accelerated proving — is what gives Breadberry bread its flavor and texture.
Closed moulds. Square loaves.
Our bread tins have lids. The dough rises inside a sealed mould, which produces the cube shape and the 11×11 cm square slice. No dome. No offcuts. No wasted filling.
Baked and dispatched the same morning.
Loaves go into the oven at 2am and everything is dispatched by 5:30am. The bake date on the pack is the same as the dispatch date. We put it on there because we're proud of it.
